Pan Searing the Chicken

Heat olive oil in a pan over medium-high heat. Season the chicken breasts with salt, black pepper, and smoked paprika. Once the oil is hot, add the chicken breasts and sear for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Chipotle Sweet Potato Purée

Make the Purée

Peel and chop sweet potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and return to pot. Add chipotle peppers, butter, salt, and black pepper. Mash until smooth and creamy.

Buttered Green Beans

Sauté the Green Beans

Trim the green beans and blanch in boiling water for 3-4 minutes. Drain and shock in cold water. In a pan, melt butter and add green beans. Sauté for 2-3 minutes, seasoning with salt to taste.

Pear and Bacon Compote

Prepare the Compote

Cook bacon in a saucepan until crispy. Remove and chop into pieces. In the same pan, add chopped pears, brown sugar, cinnamon, and salt. Cook on medium heat until the pears are soft and the mixture is syrupy, about 10 minutes. Stir in bacon.
