Method
Prepare the Chicken
Marinate and Grill the Chicken
In a bowl, combine olive oil, garlic powder, cumin, salt, and black pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
Grill the Chicken
Preheat your grill or grill pan over medium heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for a few minutes.
Slice the Chicken
Once the chicken has rested, slice it into thin strips.
Assemble the Burrito
Prepare the Tortillas
Warm the flour tortillas in a dry skillet or the microwave until pliable.
Build the Burrito
On each tortilla, layer sliced grilled chicken, a sprinkle of shredded cheese, and a generous spoonful of red enchilada sauce.
Roll the Burrito
Fold in the sides of the tortilla and roll it tightly from the bottom to the top to enclose the filling.
Serve
Prepare Sides
In a saucepan, heat the black beans until warm. Serve the cooked rice alongside.
Plate the Dish
Place the burrito on a plate, top with additional red sauce and cheese if desired, and garnish with fresh cilantro and lime wedges. Serve with rice and black beans on the side.
