Lavender Simple Syrup (make ahead)

Method

Lavender Simple Syrup (make ahead)

1

Make syrup

Combine 100 g granulated sugar and 100 ml water in a small saucepan. Add 2 tsp dried culinary lavender buds. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Simmer for 2 minutes to infuse, then remove from heat.

2

Let the lavender steep in the syrup as it cools to room temperature, about 20–30 minutes for a pronounced floral note. Strain out the lavender buds through a fine mesh sieve or cheesecloth and store syrup refrigerated in a sealed container for up to 2 weeks.

Cocktail Assembly

3

Muddle herbs

Place 8 Thai basil leaves in a cocktail shaker. Add 30 ml lavender simple syrup, 20 ml fresh lemon juice and 15 ml yuzu juice. Gently clap one basil leaf between your hands and reserve for garnish. Lightly muddle the basil leaves in the shaker—press to release oils but do not pulverize (8–10 firm presses).

4

Build and chill

Add 50 ml gin and 5 ml dry vermouth (optional) into the shaker. Fill the shaker with ice to about three-quarters full.

5

Shake

Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and well diluted (this chills and balances the citrus).

6

Fine strain

Double-strain the cocktail into a chilled coupe or martini glass using a fine mesh strainer to remove herb fragments and ice shards. This yields a silky texture and clear presentation.

7

Finish and garnish

Add 1 tsp edible glitter to the surface of the cocktail and gently stir once with a bar spoon to distribute shimmer without breaking the foam (if any). Twist the reserved basil leaf and place it on the surface, then add a lemon twist on the rim or floated alongside the basil. Serve immediately so the glitter remains suspended and the aromatics are fresh.
