Prepare equipment

Select a small saucepan or a tokkuri (ceramic sake carafe) and a heatproof serving cup (ochoko) for each serving. Have a small strainer ready if using ginger or peel.

Combine the sake and optional water in the saucepan or tokkuri. Use 1 cup (240 ml) sake plus up to 1/4 cup (60 ml) water if you prefer a lighter strength.

Add the sliced fresh ginger, honey (or sugar), and the optional lemon/yuzu peel to the sake. The ginger and peel add gentle aromatics that complement Gekkeikan's flavor.

Heat gently over low to medium-low heat. Do not boil. Aim for a serving temperature of 120–130°F (49–54°C). This usually takes 4–6 minutes on a stovetop depending on volume and pan. Heat just until steaming and small bubbles form at the edge; avoid vigorous bubbling which will drive off delicate aromas and alcohol.

Taste carefully with a clean spoon and adjust sweetness if desired by stirring in a little more honey or sugar, dissolving fully.

Remove from heat. If you used ginger slices or peel and prefer a clear pour, strain the warmed sake into the serving tokkuri or directly into individual ochoko cups through a small fine mesh strainer.

Pour the hot sake into warmed ochoko cups. Warm the cups beforehand by rinsing with hot water and discarding before pouring.

Garnish each cup with a thin lemon or yuzu slice and optionally a small sprig of mitsuba or parsley floated on top.

Serve immediately while warm. Sip slowly to enjoy the aroma and gentle sweetness. Discard any leftover warmed sake after 1–2 hours rather than reheating repeatedly.
