Prep
Make ginger syrup (if not ready)
Combine equal parts granulated sugar and water in a small saucepan (e.g., 1 cup each) with a 2–3 inch sliced fresh ginger piece. Bring to a simmer, stir until sugar dissolves, simmer 5 minutes, then cool and strain. Store refrigerated.
Thinly slice jalapeño. If you prefer milder heat, remove seeds. Prepare fresh lime juice and mango purée (blend ripe mango with a splash of water until smooth). Chill green tea and coconut water beforehand for best results.
Build the cocktail
Combine base and tropical elements
Add to the shaker: 6 oz coconut water, 2 oz pineapple juice, 1 oz green tea, 1 oz mango purée and 0.5 oz fresh lime juice.
Add sweetener and bitters
Pour in 0.5 oz ginger syrup and add 3 tsp (or a few drops) grapefruit non-alcoholic bitters/extract. These will provide spicy warmth and a bright bitter counterpoint to the tropical notes.
Shake
Fill the shaker with ice (about 1 cup) and shake vigorously for 10–12 seconds until well chilled and slightly diluted.
Finish & serve
Top with 1.5 oz sparkling water to add lift and effervescence. Gently stir once to integrate.
Taste and adjust: add an extra 0.25–0.5 oz ginger syrup if you prefer sweeter, or a drop more lime if brighter acidity is desired. For more heat, briefly steep an additional jalapeño slice in the finished drink.
