Prepare Glass & Muddle

Chill and muddle

Chill a large wine glass or stemmed goblet in the freezer for 5–10 minutes. In a mixing glass or small shaker, place 6 of the fresh mint leaves and the fresh lime juice. Add the elderflower liqueur (3 tbs) and, if you want a sweeter spritz, the 1/2 tbs simple syrup. Gently muddle the mint with the liquids just enough to release aroma (6–8 gentle presses). Avoid over-muddling to prevent bitterness.

Assemble Drink

Add ice and combine

Fill the chilled glass about two-thirds full with crushed ice or ice cubes (≈1 cup). Strain the muddled mixture over the ice to remove large mint pieces. If you prefer more mint in the drink, pour everything (including muddled bits) into the glass.

Top with bubbles

Slowly pour the non-alcoholic sparkling wine (120 ml) into the glass. Follow with the club soda (60 ml) to taste — pour gently along the side to preserve effervescence. Stir once gently with a bar spoon (2–3 turns) to combine without flattening the bubbles.

Finish & Garnish

Slap the remaining 2 mint leaves between your palms to activate their oils and tuck a mint sprig into the glass for aroma. Add a thin lime wheel or twist on the rim. If using, float an edible flower on top for a decorative touch. Serve immediately with a straw or cocktail pick.
