Method
Prepare Spiced Pineapple Puree (make ahead or in-batch)
Make puree
Combine 2 oz fresh pineapple chunks, 1/4 tsp ground ginger, a pinch of ground cinnamon, and 1/2 tsp simple syrup in a blender. Blend until smooth. Strain through a fine mesh if you want a smoother texture. Yield: roughly 2 oz; use 1 oz for one cocktail.
Build & Shake
Add vodka (2 oz), Wheatley cordial (0.5 oz), fresh lime juice (0.75 oz), fresh pink grapefruit juice (0.75 oz), guava nectar (1 oz), spiced pineapple puree (1 oz), simple syrup (0.5 oz) and allspice dram (0.25 oz) to a cocktail shaker filled with ice.
Dry-shake (without ice) for 5–7 seconds if your puree is thick to help integrate, then add ice and shake vigorously for 10–15 seconds until well chilled.
Double-strain the mixture into a chilled coupe or a rocks glass filled with fresh ice, depending on service style. For a taller, more refreshing drink, use a highball and leave room to top with soda.
Finish & Garnish
If desired, top gently with 1 oz club soda for a light effervescence. Give a gentle stir to incorporate if added.
Express the oils of a grapefruit twist over the drink, then drop the twist in or garnish with a grapefruit wheel and a dehydrated pineapple or lime wheel. Lightly dust the top with a pinch of ground cinnamon for aroma if using.
