Method

Meatballs

1

Prepare the Meatballs

In a large bowl, combine ground lamb, breadcrumbs, egg, minced garlic, parsley, cumin, coriander, paprika, salt, and pepper. Mix until well combined.

2

Shape and Cook

Form the mixture into small meatballs, about 1 inch in diameter. Heat a skillet over medium heat, add a little olive oil, and cook the meatballs for about 10-12 minutes, turning occasionally until browned and cooked through.

Fennel Tzatziki

3

Make the Tzatziki

In a mixing bowl, combine Greek yogurt, grated fennel, minced garlic, lemon juice, dill, salt, and pepper. Stir until well mixed and refrigerate until ready to serve.

Heirloom Tomato Salad

4

Prepare the Salad

In a bowl, combine chopped heirloom tomatoes, olive oil, red onion, basil, salt, and pepper. Toss gently and set aside.

Flatbread

5

Make the Flatbread

In a bowl, mix together flour, baking powder, and salt. Add olive oil and water, mixing until a dough forms. Knead for a few minutes, then divide into small balls. Roll out each ball into flat rounds. Cook on a hot skillet for 2-3 minutes on each side until lightly browned.
