Method
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set aside.
In a medium bowl, whisk together the all-purpose flour, baking soda, and fine sea salt until evenly combined. Set aside.
In a large mixing bowl, using an electric mixer (stand or hand) on medium speed, beat the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy, about 2–3 minutes. Scrape down the bowl as needed.
Using a spatula, fold in the semisweet chocolate chips and, if using, the chopped walnuts or pecans until evenly distributed throughout the dough.
Use a 1.5 tablespoon (or medium cookie scoop) to portion dough into equal balls (about 1.5 tablespoons each). Place dough balls 2 inches apart on the prepared baking sheets to allow spreading. For larger, bakery-style cookies, use 2.5–3 tablespoon portions and space accordingly.

Bake one sheet at a time in the preheated 350°F (175°C) oven for 10–12 minutes for 1.5 tablespoon cookies, until the edges are golden brown but the centers still look slightly soft. If baking larger cookies, bake 12–14 minutes. Rotate the pan halfway through baking for even color.
Cool
Remove the baking sheet from the oven. If desired, immediately sprinkle a small pinch of flaky sea salt on top of each warm cookie. Let the cookies cool on the baking sheet for 5 minutes to set, then transfer them to a wire rack to cool completely.
Storage
Once fully cooled, store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze baked cookies up to 3 months or freeze dough portions on a tray then transfer to a freezer bag for up to 3 months.
