Muddle shiso
Place 4 of the shiso leaves into a cocktail shaker. Add the simple syrup and gently muddle 6–8 times to release aromatic oils without shredding the leaves (you want aroma, not bitterness).
Build the cocktail
Add the Roku gin (60 ml), fresh lime juice (20 ml), and 2 remaining whole shiso leaves into the shaker. Fill the shaker with ice until about three-quarters full.
Shake
Secure the shaker and shake vigorously for 12–15 seconds until the shaker is cold and properly diluted (the exterior will frost). This chills and integrates the shiso aroma with the spirit and citrus.
Double strain
Fine-strain the contents into a chilled coupe or rocks glass over fresh ice (or serve neat in coupe). Use a fine mesh strainer in addition to the shaker strainer to remove small bits of leaf and ice shards for a clean-textured drink.
Optional: Top with soda
If you prefer a longer, lighter variation, top the cocktail with 60 ml soda water. Gently stir once to combine, taking care not to bruise the shiso aroma.
Garnish and serve
Garnish with a single shiso leaf and a lime wheel or twist. Clap the shiso leaf between your hands once to awaken its aroma before placing it on the drink. Serve immediately.
