Prepare the Eggplant

Slice the eggplants lengthwise into 1/4-inch thick slices. Sprinkle with salt and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

Cook the Spinach

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, then add the spinach. Cook until wilted, season with salt and pepper, then remove from heat and let cool.

Mix the Filling

In a bowl, combine ricotta cheese, mozzarella cheese, parmesan cheese, cooked spinach, and chopped basil. Mix well and adjust seasoning as needed.

Grill the Eggplant

Preheat a grill or grill pan. Grill the eggplant slices for about 3-4 minutes on each side until tender and slightly charred.

Assemble the Rollantine

On each eggplant slice, place a spoonful of the cheese filling and roll it up tightly. Secure with a toothpick if needed.

Bake

Preheat the oven to 375°F (190°C). Spread 1 cup of marinara sauce on the bottom of a baking dish. Place the eggplant rolls seam-side down on top of the sauce. Cover with remaining marinara sauce and sprinkle with additional cheese if desired.

Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden.
