Pork Roast Preparation
Prepare the Pork
Preheat your oven to 300°F (150°C). Rub the pork shoulder with olive oil, salt, black pepper, minced garlic, rosemary, and thyme. Place in a roasting pan and add chicken broth. Cover tightly with foil and roast for about 3 hours or until the meat is tender.
Shred the Pork
Once roasted, remove the pork from the oven and let it rest for 20 minutes. Shred the meat using two forks.
Broccoli Rabe Preparation
Cook the Broccoli Rabe
While the pork is roasting, bring a pot of salted water to a boil. Blanch the broccoli rabe for 2-3 minutes, then drain and rinse under cold water. In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 30 seconds. Add the blanched broccoli rabe and sauté for about 5 minutes until tender. Season with salt.
Sandwich Assembly
Assemble the Sandwich
Spread mayonnaise on the brioche buns. Layer with shredded pork and sautéed broccoli rabe. Top with the other half of the bun and serve with fries on the side.
