Edamame
Method
Edamame
Prepare and cook
If using frozen edamame in pods, rinse briefly under cold water to remove any ice crystals. Bring 4 cups of water to a rolling boil in a medium saucepan. Add the frozen edamame (pods or shelled) to the boiling water and cook uncovered for 3–5 minutes until tender and bright green (3 minutes for shelled, 4–5 minutes for pods). If you prefer steaming, place edamame in a steamer basket over simmering water and steam for 4–6 minutes until tender.
Drain and season
Drain the edamame well in a colander and return to the warm saucepan (off the heat) or a mixing bowl. Immediately drizzle with 1 tablespoon extra-virgin olive oil, add 1 teaspoon smoked sea salt, 1 teaspoon freshly ground black pepper, 1 teaspoon fresh lemon juice, and 1/4 teaspoon red pepper flakes if using. Toss gently to coat so the warm beans absorb the flavors.
Serve
Transfer to a serving bowl. If serving pods, sprinkle a little extra smoked sea salt on top so diners can pop the beans from the pods into their mouths. Serve warm or at room temperature as a gluten-free, vegan appetizer or snack.
Make-ahead and storage
Cooked edamame can be refrigerated in an airtight container for up to 3 days. Reheat briefly in a microwave or in a hot skillet with a splash of water or oil. Adjust smoked sea salt after reheating to taste.
