Preparation

1

Prepare the Ingredients

Begin by cutting the sirloin tips into bite-sized pieces. Clean the mushrooms with a damp cloth and slice them. Chop the onion and mince the garlic.

Cooking

2

Sear the Meat

In a large skillet, heat the olive oil over medium-high heat. Add the sirloin tips and season with salt and black pepper. Sear the meat until browned on all sides, about 5-7 minutes. Remove the meat from the skillet and set aside.

3

Cook the Vegetables

In the same skillet, add the onions and cook for 2-3 minutes until they start to soften. Add the garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.

4

Add Liquids

Pour in the red wine, scraping the bottom of the skillet to deglaze. Then add the beef broth and soy sauce, stirring to combine.

5

Combine and Thicken

Return the sirloin tips to the skillet. Sprinkle thyme over the mixture and bring to a simmer. Mix cornstarch with a tablespoon of water to create a slurry, then stir it into the sauce to thicken. Cook for an additional 5 minutes.

6

Serve

Once the sauce is thickened and the meat is cooked through, serve the sirloin tips in mushroom sauce hot over rice or mashed potatoes.
