Directions
Marinate the Chicken
In a large bowl, combine the buttermilk, hot sauce, cayenne pepper, and salt. Add the chicken thighs and ensure they are well-coated. Cover and refrigerate for at least 1 hour (or overnight for best results).
Prepare the Breading
In a separate bowl, mix together the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, black pepper, and a pinch of salt.
Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Fry the chicken in hot oil for about 5-7 minutes per side, or until golden brown and cooked through. Drain on paper towels.
Toast the Buns
In the same skillet, lightly toast the brioche buns until golden and crisp.
Assemble the Sandwich
Spread a generous amount of chipotle mayonnaise on the bottom bun. Place a piece of crispy chicken, followed by a couple of pickle slices and a leaf of Bibb lettuce. Top with the other half of the bun and serve immediately.
