Prepare strawberries

Choose 24 fresh, ripe strawberries about similar in size. Rinse them gently under cool running water to remove dirt. Pat completely dry with paper towels, then leave on a clean towel to air-dry for 15–20 minutes. It is crucial that the berries are fully dry so chocolate adheres and does not seize.

Trim stems only if necessary, leaving a small green cap or stem intact to provide a handle for dipping. If stems are removed, leave a short piece of hull for holding.

Melt dark chocolate

Double boiler method (preferred)

Place the chopped dark chocolate in a heatproof bowl set over (not touching) a pot of simmering water. Stir frequently until melted and smooth, about 5–7 minutes. Remove bowl from heat. If chocolate is too thick for easy coating, stir in up to 1/2 to 1 teaspoon of vegetable oil, a little at a time, until glossy and pourable.

Microwave method (alternative)

Microwave chopped dark chocolate in a microwave-safe bowl at 50% power in 20–30 second bursts, stirring between bursts, until mostly melted. Continue stirring off-heat until smooth. Thin with up to 1/2 teaspoon oil if needed.

Melt white chocolate

Double boiler method (preferred)

In a separate heatproof bowl over simmering water, melt the white chocolate, stirring constantly until smooth and just melted, about 4–6 minutes. White chocolate is more sensitive—remove from heat while a few small bits remain and stir to finish melting. If too thick, stir in up to 1/2–1 teaspoon oil (add sparingly) to reach a dipping consistency.

Microwave method (alternative)

Microwave chopped white chocolate at 50% power in 15–20 second bursts, stirring each time until almost melted. Finish stirring off-heat to avoid overheating. Thin with small amounts of oil if necessary.

Dip strawberries

Line a baking sheet with the parchment paper or silicone mat and set nearby. Hold a strawberry by its stem and dip it into the melted dark chocolate, swirling to coat about two-thirds of the berry. Lift, allow excess to drip back into the bowl, then place the strawberry on the prepared sheet. Repeat until half of the berries (about 12) are coated in dark chocolate.

Using a clean hand or a spoon, dip the remaining strawberries into the melted white chocolate, coating about two-thirds of each. Allow excess to drip off and place them on the parchment-lined sheet.

Optional finishes: While chocolate is still wet, sprinkle a pinch of coarse sea salt on some dark-chocolate berries. For white-chocolate berries, sprinkle with sprinkles or chopped toasted nuts. Work quickly so garnishes adhere before the chocolate sets.

Drizzle & decorate (optional)

If you want a cross-decoration, spoon a few tablespoons of the opposite melted chocolate into a small piping bag, zip-top bag with corner snipped, or use a fork. Drizzle dark chocolate over white-coated strawberries and white chocolate over dark-coated berries in thin streams. Allow drizzles to set.

Set and store

Let the dipped strawberries sit at room temperature until chocolate is firm, about 20–30 minutes. For faster setting, place the baking sheet in the refrigerator for 10–15 minutes, but do not store long-term in the fridge as strawberries can release moisture and soften the chocolate coating.

Serve within 24 hours for best texture. If storing, place single layer in an airtight container with parchment between layers and refrigerate up to 48 hours; allow to come to cool-room temperature for 10–15 minutes before serving for best flavor.
