Clean and soak

Trim any connective tissue and green bits from the chicken livers; pat dry with paper towels. Place livers in a bowl and pour buttermilk and hot sauce over them. Stir to coat, cover, and refrigerate for 30 minutes to 1 hour (short soak tenderizes and mellows flavor).

Prepare dredge

While livers soak, combine flour, cornstarch, smoked paprika, garlic powder, onion powder, 1 tsp salt, and 1/2 tsp black pepper in a shallow wide bowl or plate. Whisk to evenly distribute spices.

Heat oil

Pour oil into a heavy skillet or Dutch oven to reach about 1 to 1 1/2 inches deep. Heat over medium-high until it reaches 350°F (175°C) or a cube of bread browns in about 45–60 seconds. Keep a thermometer handy to maintain temperature.

Dredge and fry

Working in small batches (do not overcrowd), remove livers from the buttermilk, letting excess drip off, then dredge thoroughly in the flour mixture, pressing to adhere. Shake off excess and gently lower into hot oil. Fry 3–4 minutes, turning once, until exterior is deep golden-brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a sheet pan or paper towels to drain; tent loosely with foil to keep warm. Repeat with remaining livers, maintaining oil temperature around 325–350°F.

Optional finish

If livers are browning too quickly before cooked through, finish in a 350°F (175°C) oven for 4–6 minutes. Let rest 2–3 minutes before serving to let juices redistribute.

Pepper Jelly & Dipping Sauce

Combine pepper jelly, apple cider vinegar, and Dijon mustard in a small saucepan. Warm over low heat, stirring until the jelly melts and the mixture is glossy and slightly loose, about 2–3 minutes. Taste and add chili flakes if you want more heat. Remove from heat and transfer to a serving bowl. Keep warm or at room temperature.

Baguette Toast Points

Preheat oven to 400°F (200°C). Slice the baguette on the diagonal into 12–16 slices (about 1/4-inch thick). Brush each slice lightly with melted butter and a touch of olive oil, sprinkle with 1/4 tsp salt distributed across slices. Arrange on a baking sheet in a single layer and toast 6–8 minutes until golden at edges and crisp. Cool slightly; cut into pointed toast points if desired.

Lightly Dressed Petit Salad

In a large bowl, whisk together olive oil, lemon juice, honey, 1/8 tsp salt and 1/8 tsp black pepper. Add mixed baby greens, cherry tomatoes and sliced red onion; toss gently to coat evenly. Taste and adjust seasoning. Keep chilled until plating.

Plating & Finish

Arrange a small handful (about 1 cup) of the dressed baby greens on each plate. Place 6–8 crispy fried chicken livers beside the salad. Spoon 2–3 tablespoons of warm pepper jelly sauce into a small ramekin or drizzle lightly over a couple of livers. Fan 3–4 baguette toast points against the livers. Sprinkle chopped parsley over the livers and serve lemon wedges on the side for squeezing.
