Black Tapioca Pearls (Boba)
Cook pearls
Bring 6 cups water to a rolling boil in a medium saucepan. Add 1 cup uncooked black tapioca pearls and stir gently to prevent sticking. When the pearls float, cover and cook at medium-low simmer according to package time (typically 20–30 minutes for standard pearls). Stir occasionally to prevent clumping.
Rest pearls
After the cook time, turn off heat, cover the pot, and let the pearls sit for an additional 15–20 minutes (or as recommended by the package) to achieve the desired chewiness.
Rinse and sweeten pearls
Meanwhile, combine 1 cup brown sugar and 1 cup water in a small saucepan. Bring to a simmer and stir until the sugar dissolves to make a syrup. Once pearls are rested, drain them into a colander and rinse briefly with warm water. Transfer drained pearls into the brown sugar syrup and let soak for at least 10 minutes so they absorb sweetness and remain soft. Keep warm until serving.
Tea Bases (makes ~4 cups brewed)
Brew black tea
Bring 4 cups water to just under a boil. Remove from heat and steep 4 tbs black tea (or 4 tea bags) for 3–5 minutes for strong brew. Strain and transfer to a heatproof container. Sweeten lightly with 2–4 tablespoons simple syrup if making milk tea base. Chill if preparing iced drinks.
Brew green and oolong (optional)
For green tea base: steep 4 tbs green tea in 4 cups water at ~175–185°F (80–85°C) for 2–3 minutes. For oolong: steep 4 tbs oolong for 3–4 minutes. Adjust strength to taste. Cool brewed tea completely in refrigerator before combining with milk and ice.

Prepare flavor stations: place simple syrup, honey, flavored syrups, and fruit purees in separate containers with small ladles or pour spouts. Typical recipe proportions per 16 oz serving: 1–2 tablespoons flavored syrup or 2–3 tablespoons fruit puree; 1–2 tablespoons simple syrup or honey to taste. For fruit-based drinks, mix 3 tablespoons fruit puree with 2–3 tablespoons brewed tea and shake with ice to emulsify.
Assembly (per 16 oz serving)
Step 1 — Add pearls and toppings
Place 3–4 tablespoons (about 1/4 cup) of prepared tapioca pearls into the bottom of a 16 oz cup. Add 1–2 tablespoons of optional toppings (fruit jelly or popping boba) if desired.
Step 2 — Add flavor
Add 1–2 tablespoons flavored syrup or 2–3 tablespoons fruit puree into the cup over the pearls.
Step 4 — Sweeten and ice
Add ice to fill the cup, leaving about 1/2 inch headspace. Taste and add 1–2 tablespoons simple syrup or honey if additional sweetness is desired. Stir gently.
Step 5 — Serve
Top with a lid, insert a wide boba straw, and serve immediately. If pearls have cooled and hardened, reheat briefly in warm syrup before serving to restore chewiness.
Storage & Make-Ahead
Keep brewed teas refrigerated up to 48 hours. Store cooked tapioca pearls in brown sugar syrup at room temperature for up to 4 hours for best texture; longer refrigeration will firm them. Simple syrup and flavored syrups keep refrigerated for up to 2 weeks.
