Directions
Prepare the Rice
Start with freshly cooked Japanese short-grain rice. If you don't have fresh rice, you can reheat leftover rice by adding a little water and microwaving it until warm.
Make the Dashi Broth
In a pot, bring 4 cups of water to a boil. Add dashi powder (or use pre-made dashi) and stir until fully dissolved. You may add soy sauce to taste.
Prepare Toppings
While the broth is heating, prepare your toppings. Finely chop green onions, shred nori seaweed, chop the pickled plum, and if using, flake the salmon.
Assemble the Bowl
In a serving bowl, place 1 cup of cooked rice. Top with a sprinkle of green onions, nori, chopped umeboshi, and salmon flakes.
Pour the Broth
Carefully pour about 2 cups of hot dashi broth over the rice and toppings.
Add Final Touches
Sprinkle toasted sesame seeds over the top and add wasabi if desired. Serve immediately.
