Prep
Chill a coupe or rocks glass in the freezer or fill it with ice water while you mix the cocktail. If using fresh citrus, squeeze lemon juice and measure ingredients.
Dry shake (if using egg white)
In a shaker, combine bourbon (2 oz), blood orange liqueur (0.5 oz), bianco vermouth (0.5 oz), fresh lemon juice (0.5 oz), simple syrup (0.25 oz), Angostura bitters (2 dashes) and the egg white (0.5 large). Seal and shake vigorously without ice for 15–20 seconds to emulsify and build foam.
Wet shake
Add ice (about 1 cup) to the shaker. Shake hard for 12–18 seconds until the shaker is cold to the touch and the mixture is well chilled.
Strain
Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or over a large ice cube in a rocks glass using a Hawthorne and fine mesh strainer to capture any small ice chips and egg white solids.
Finish & garnish
Express the oils of the blood orange wheel over the drink by holding it skin-side down and giving it a quick twist, then drop the wheel into the glass (or use a twist). Finish with a light grating of nutmeg or a few pinches of orange zest if desired.
