Brew strong tea

Bring 3 cups water to a near boil. Use 3 heaping teaspoons loose black tea (or 3 tea bags per cup equivalent) and steep for 4–5 minutes to create a strong infusion. Strain leaves (if using loose tea) and transfer the brewed tea to a heatproof pitcher.

If the tea tastes too strong, add up to 1/2 cup hot water to adjust to your preferred strength. Keep tea hot but not boiling.

Milk & Cream

Heat milk and cream

In a small saucepan over medium-low heat, combine 1 cup whole milk and 1/4 cup heavy cream. Warm gently until just steaming — do not boil — about 3–4 minutes, stirring occasionally to prevent a skin from forming.

If you prefer a frothier finish, reserve 2 tablespoons of the warmed milk to froth or whip later for garnish.

Make flavor syrup

Add 2 tablespoons dark brown sugar, 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon freshly grated nutmeg to the warm milk and cream. Stir constantly over low heat until the sugar dissolves and the mixture is uniform, about 1–2 minutes. Taste and adjust sweetness or spices as desired.

Remove from heat once sugar is fully dissolved and aroma is fragrant.

Combine tea and milk mixture

Pour the hot brewed tea into a large teapot or directly into two heatproof cups (about 2 servings). Add the warmed milk/cream and flavor syrup to the tea, stirring gently to combine. The approximate ratio is 3 cups brewed tea to 1 1/4 cups milk/cream mixture; adjust to taste for a stronger or milkier cup.

Taste and adjust: add more brown sugar for sweetness, a dash more cinnamon or nutmeg for spice, or up to 1/2 cup hot water if the tea is too concentrated.

Finish and serve

Divide into two cups (or three smaller servings). Top each with reserved frothed milk or 1 tablespoon whipped cream. Garnish with a cinnamon stick or a light dusting of ground cinnamon or nutmeg. Serve immediately while hot.
