Lamb Cooking
Prepare the Lamb
In a large bowl, combine minced garlic, cumin, oregano, salt, black pepper, and lime juice. Rub this mixture all over the lamb shoulder and let it marinate for at least 1 hour, preferably overnight.
Slow Cook the Lamb
Place the marinated lamb shoulder in a slow cooker. Pour in the beef broth. Cover and cook on low for 8 hours or until the lamb is tender and easily pulls apart with a fork.

While the lamb is cooking, slice the cebollas and grill them until they are soft and slightly charred. Roast the Anaheim pepper until the skin is blistered, then remove the skin and slice it. Drain and rinse the chickpeas.
Prepare the Avocado
Slice the avocados just before serving to keep them fresh.
