Prepare the Pork

In a large pot, combine the pork shoulder, orange juice, lime juice, minced garlic, oregano, cumin, salt, and black pepper. Add enough water to cover the pork. Bring to a boil over medium-high heat.

Cook the Pork

Reduce the heat to low, cover the pot, and simmer for about 2-3 hours or until the pork is tender and can be easily shredded.

Crisp the Pork

Once cooked, remove the pork from the pot and shred it with two forks. Heat the lard or vegetable oil in a large skillet over medium-high heat. Add the shredded pork and cook until crispy and golden brown, about 5-7 minutes.

Pickle the Onions

In a saucepan, combine the white vinegar, water, sugar, salt, oregano, black peppercorns, and bay leaves. Bring to a boil, then add the sliced red onions. Remove from heat and let cool. Transfer to a jar and refrigerate for at least 1 hour before serving.
