Carne Asada

Method

Preparation

1

Marinate the Carne Asada

In a bowl, combine lime juice, minced garlic, olive oil, cumin, salt, black pepper, and chopped cilantro. Add the flank steak and marinate for at least 1 hour, or overnight for best results.

2

Prepare the Salsa Mocha

In a blender, combine roasted tomatoes, chipotle peppers, minced garlic, diced onion, lime juice, salt, and black pepper. Blend until smooth. In a skillet, heat a little olive oil and sauté the prawns until they turn pink. Add the salsa mocha and cook for an additional 2-3 minutes.

3

Make the Guacamole

Cut avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with lime juice and salt. Fold in diced tomato, onion, cilantro, and jalapeño (if using).

Cooking

4

Cook the Carne Asada

Preheat a grill or skillet over high heat. Remove the flank steak from the marinade and grill for about 5-7 minutes on each side, or until desired doneness. Let the meat rest for a few minutes before slicing.
