Method

Marinating the Chicken

Prepare the Marinade

In a large mixing bowl, combine Dijon mustard, olive oil, minced garlic, lime juice, cumin, salt, and black pepper. Mix well.

Marinate the Chicken

Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Making Guacasalsa

Combine Ingredients

In a mixing bowl, mash the avocados, then add chopped tomato, red onion, cilantro, lime juice, and salt. Mix until well combined.

Making Salsa Taquera

Roast Ingredients

In a dry skillet over medium heat, roast tomatillos, jalapeño, garlic, and onion until they are charred and softened.

Blend Salsa

Transfer the roasted ingredients to a blender or food processor. Add chopped cilantro, lime juice, and salt. Blend until smooth.

Cooking the Chicken

Grill the Chicken

Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C).
