Preparing the Salsa Morita

Toast the Chiles

In a dry skillet, toast the morita chiles over medium heat until fragrant, about 2-3 minutes. Remove and set aside.

Blend the Salsa

In a blender, combine toasted chiles, tomatoes, garlic, onion, and salt. Blend until smooth, adding water if necessary to reach desired consistency.

Cook the Salsa

In a saucepan, heat vegetable oil over medium heat. Pour in the salsa mixture and simmer for 10-15 minutes.

Cook the Protein

For pork, slow cook until tender. For chicken, boil or roast until cooked through. For tofu, sauté until golden brown.

Assemble the Torta

Slice the bolillo rolls in half and layer your choice of protein. Generously spoon the salsa morita over the top until well drenched.
