Method

Cooking the Rice

Prepare the Rice

In a medium pot, combine 1 cup of jasmine rice and 2 cups of water. Bring to a boil over high heat.

Simmer the Rice

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the water is absorbed and the rice is tender.

Fluff the Rice

Remove from heat and let it sit covered for 5 minutes. Then, fluff the rice with a fork and set aside.

Cooking the Vegetables and Tofu

Prepare the Tofu

Press the cubed tofu between paper towels to remove excess moisture. Heat a non-stick pan over medium heat and add a splash of sesame oil.

Cook the Tofu

Add the tofu to the pan and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.

Sauté the Vegetables

In the same pan, add a little more sesame oil if needed, then add the bell peppers, carrots, and snap peas. Sauté for about 5-7 minutes until they are tender-crisp.

Making the Sauce

Combine Sauce Ingredients

In a small bowl, mix together soy sauce, minced garlic, grated ginger, and honey (or agave syrup) to create the sauce.

Add Sauce to Vegetables

Pour the sauce over the sautéed vegetables in the pan and stir well to combine. Add the cooked tofu back into the pan and toss to coat everything evenly.

Plate the Dish

Serve the vegetable and tofu mixture over a bed of jasmine rice. Garnish with chopped green onions and sesame seeds.
