Prepare Tofu

Carefully remove tofu from packaging and drain any liquid. Place the whole block on a plate or shallow serving dish. Using a sharp knife, score the top in a shallow grid (1/2-inch deep) to allow sauce to penetrate, or cut into 8–12 cubes as preferred. Lightly sprinkle kosher salt evenly over the surface (if your soy sauce is salty, you can reduce or omit the salt).

If you prefer warm tofu: steam the whole block in a steamer basket over simmering water for 5–7 minutes until warmed through. For a cold salad-style dish, keep tofu chilled and proceed to saucing.

Make Aromatic Oil

In a small skillet or saucepan, warm 2 tbs neutral oil over medium heat until shimmering but not smoking. Add minced garlic, shallot, and ginger. Stir constantly for 30–45 seconds until fragrant and the shallot begins to soften — avoid browning (you want fragrant but not burnt).

Build the Sauce

Lower heat to medium-low. Add sliced chili and quickly stir for 10 seconds. Add light soy sauce, dark soy sauce, oyster sauce, rice vinegar, sugar, and 2 tbs water or stock. Stir to combine and let the mixture heat through for 30–60 seconds, tasting and adjusting: add a little more soy for saltiness, a pinch more sugar if too sharp, or more vinegar for brightness. Remove from heat and stir in sesame oil.

If you prefer a slightly thicker sauce for spooning, simmer 1–2 minutes until reduced slightly. For a glossier finish, you can dissolve 1/4 tsp cornstarch in 1 tbs water and stir into the sauce, heating briefly until thickened; allow to cool slightly before pouring over tofu.

Dress the Tofu

If tofu was steamed, drain any condensation. Spoon the warm huk gin sauce evenly over the scored or cubed tofu so it seeps into the cuts. If tofu is cold, pour sauce at room temperature or slightly warm so it doesn't shock the tofu texture. Aim to use all the sauce but leave a little pooling for flavor with each bite.

Finish and Serve

Scatter thinly sliced scallions and chopped cilantro over the sauced tofu. Sprinkle fried shallots (if using) and toasted sesame seeds on top. Serve immediately with lime wedges on the side for optional squeezing. Huk Gin Tofu is best eaten same day; if prepping ahead, store components separately and dress just before serving.
