Prepare the Oil

In a deep frying pan or wok, heat the oil over medium-high heat until it reaches 350°F (175°C).

Make the Tempura Batter

In a mixing bowl, combine the tempura batter mix and cold water. Stir gently until just combined; do not overmix.

Fry the Alligator

Dip each piece of alligator meat into the tempura batter, allowing excess to drip off. Carefully place the battered alligator into the hot oil and fry for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

Assemble the Roll

Prepare the Vegetables

Slice the cucumber, jalapeno, and avocado into thin strips.

Layer the Ingredients

On a sushi mat or flat surface, lay a sheet of nori (if using). Start layering with tempura fried alligator pieces, followed by cucumber, jalapeno, and avocado slices.

Season the Roll

Sprinkle cajun spice over the assembled fillings and drizzle with Louisiana hot sauce.

Roll It Up

Carefully roll the nori over the fillings, using the mat to help shape it tightly. Seal the edge with a little water.
