Rim the glass

Chill a martini (coupe) glass in the freezer for 5–10 minutes. Rub the lime wedge around the glass rim, then dip the rim into the coarse salt spread on a small plate. Set the glass aside.

Combine ingredients

Add the tequila, Cointreau (or triple sec), fresh lime juice, and simple syrup into a cocktail shaker. If using egg white for a silky texture, add the egg white now.

Dry shake (if using egg white)

If you added egg white, seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build foam.

Shake with ice

Add ice to the shaker (about 6–8 cubes). Seal and shake vigorously for 12–18 seconds until the outside of the shaker is very cold and slightly frosty.

Fine strain

Double-strain the cocktail (using a Hawthorne or built-in strainer and a fine mesh strainer) into the prepared chilled, salted martini glass to remove ice shards and ensure a smooth texture.

Finish & garnish

If desired, gently float 0.25 oz of orange liqueur on top for an aromatic note. Express a bit of lime zest over the top to release oils, then drop a lime wheel or place a lime wedge on the rim for garnish. Serve immediately.
