Prepare the Catfish

Rinse the catfish fillets under cold water and pat them dry with paper towels. Season both sides with salt, black pepper, paprika, and cayenne pepper.

Setup Breading Station

In one bowl, pour the buttermilk. In a second bowl, mix together the cornmeal and all-purpose flour. Dip each fillet first in the buttermilk, then coat it in the cornmeal-flour mixture.

Heat the Oil

In a large skillet or frying pan, heat the cooking oil over medium-high heat until it reaches about 350°F (175°C).

Fry the Catfish

Carefully place the breaded catfish fillets into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
