Prepare

Prepare glass

Choose a Collins or highball glass. Add the lime wedges into the glass.

Add mint and simple syrup

Tuck the mint leaves on top of the lime wedges and pour the simple syrup over them.

Muddle & Build

Muddle gently

Using a bartending muddler, press down gently on the mint leaves and lime wedges 6–8 times to release oils and juice. Avoid over-muddling the mint to prevent bitterness—just a few firm presses until fragrant.

Add rum and lime

Pour the white rum and fresh lime juice into the glass over the muddled mixture.

Add ice

Fill the glass almost to the top with crushed ice, leaving a half-inch of headspace for the sparkling water.

Top & Finish

Add sparkling water

Slowly pour the chilled sparkling water (club soda) over the ice to preserve fizz, roughly 3 oz. Use a bar spoon to gently stir once or twice to integrate the ingredients without flattening the bubbles.

Garnish and serve

Garnish with a fresh mint sprig and a lime wheel or wedge. Optionally slap the mint sprig once between your palms to wake up the aroma before placing it in the drink. Serve immediately with a straw.
