Prepare the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast for 30-35 minutes until soft and caramelized.
Cook the Gnocchi
In a large pot of boiling salted water, cook the potato gnocchi according to package instructions until they float to the top. Drain and set aside.
Sauté the Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sweet shrimp, season with salt and black pepper, and cook for about 2-3 minutes until they turn pink and opaque. Remove and set aside.
Prepare the Sauce
In the same skillet, add the roasted garlic (squeezed from the skins), lobster stock, and butter. Stir until the butter is melted and the mixture is well combined. Add the lemon juice and stir to combine.
Combine Ingredients
Add the cooked gnocchi and sautéed shrimp to the skillet with the sauce. Toss gently to coat them in the sauce. Add the fresh spinach and cook for an additional 2-3 minutes until wilted.
Serve
Taste and adjust seasoning if necessary. Serve immediately, garnished with extra lemon juice if desired.
