Chill glass

Place a coupe or martini glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to chill.

Prepare sugar rim

Pour the superfine sugar onto a small plate. Rub a lemon wedge around the rim of the chilled glass to moisten the edge. Dip the rim lightly into the sugar to create an even sugar rim. Set the glass aside.

Mix cocktail

Fill a shaker about two-thirds full with fresh ice. Add 2 oz Hennessy V.S, 1 oz Cointreau, 0.75 oz freshly squeezed lemon juice, and 0.25 oz simple syrup (use the syrup only if you prefer a slightly sweeter balance).

Shake

Secure the shaker lid and shake vigorously for 12–15 seconds, until the shaker is very cold and exterior is frosted. This both chills and dilutes the drink to the correct balance.

Strain and serve

Discard ice/water from the chilled glass if used. Double-strain the cocktail into the prepared sugar-rimmed coupe using a Hawthorne strainer and a fine mesh strainer to catch small ice chips and pulp.

Garnish & Finish

Express a lemon or orange twist over the cocktail (pinch the peel to release aromatic oils) and either drop the twist into the drink or rest it on the rim. Serve immediately.
