Preparation of Main Ingredients
Prepare the Shrimp
Peel and devein the shrimp, then rinse them under cold water. Pat dry with a paper towel and set aside.
Prepare the Mango
Peel the mangoes and cut them into small cubes, discarding the pit. Set aside in a mixing bowl.
Prepare the Avocado
Halve the avocado, remove the pit, and scoop the flesh into the mixing bowl with the mango. Cut into cubes.
Prepare the Cucumber
Peel the cucumber if desired and slice it thinly. Add the slices to the mixing bowl with the mango and avocado.
Prepare the Habanero
Finely chop the habanero pepper, removing seeds if you prefer less heat. Add to the mixing bowl with the other ingredients.

Make the Sauce
In a blender, combine the fresh lime juice, mango puree, olive oil, salt, and black pepper. Blend until smooth and well combined.

Let the aguachile sit in the refrigerator for about 10 minutes for the flavors to meld. Serve chilled as an appetizer or a light dish.
