Pork Preparation

1

Prepare the Marinade

In a bowl, combine orange juice, lime juice, minced garlic cloves, cumin, oregano, salt, and black pepper. Mix well.

2

Marinate the Pork

Place the pork shoulder in a large resealable bag or bowl. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.

3

Cook the Pork

Preheat the oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Cover with foil and roast for about 3 hours, or until the pork is tender and pulls apart easily with a fork.

4

Shred the Pork

Once cooked, remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks and mix with the remaining juices in the pan.

5

Warm the Tortillas

In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, until pliable.

6

Assemble the Tacos

Place a generous portion of shredded pork on each warmed tortilla. Top with chopped cilantro, diced white onions, and habanero onions.

7

Serve with Salsa and Lime

Drizzle green salsa over the tacos and serve with lime wedges on the side.

8
