Seafood Preparation

Prepare the Shrimp

Rinse the shrimp under cold water and pat dry. Season with salt and pepper to taste. Set aside.

Cook the Rice

In a medium pot, combine the white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Refried Beans

Heat the Refried Beans

In a small saucepan, heat the canned refried beans over medium heat until warmed through, stirring occasionally. This should take about 5 minutes.

Cook the Shrimp

In a large skillet over medium-high heat, add a bit of oil. Once hot, add the seasoned shrimp. Cook for about 2-3 minutes on each side until they are opaque and cooked through. Remove from heat.

Assembly

Assemble the Tacos

Warm the corn tortillas in a dry skillet or microwave. On each tortilla, layer a spoonful of rice, a spoonful of refried beans, and the cooked shrimp. Top with cilantro, diced white onion, habanero onions, and green salsa. Squeeze fresh lime juice over the top before serving.
