Prepare the Bread

Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet. Brush each slice with olive oil on both sides.

Toast the Bread

Toast the bread in the preheated oven for about 5-7 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly.

Prepare the Topping

In a bowl, combine diced fresh tomatoes, chopped basil leaves, minced garlic, salt, and pepper. Mix well.

Assemble the Bruschetta

Spoon the tomato mixture evenly over the toasted baguette slices. Top half with prosciutto slices and the other half with shavings of Manchego cheese.

Serve

Drizzle a little more olive oil over the top, if desired, and serve the bruschetta immediately.
