Roasting Bone Marrow

Prepare the Bones

Preheat the oven to 450°F (230°C). Place the beef marrow bones upright in a roasting pan. Season the bones generously with salt and cracked black pepper.

Roast the Bones

Roast the bones in the preheated oven for about 15-20 minutes, or until the marrow is soft and starting to bubble.

Making Corn Tortillas

Mix the Dough

In a mixing bowl, combine masa harina, water, and salt. Mix until a dough forms. It should be smooth and pliable.

Shape the Tortillas

Divide the dough into small balls (about the size of a golf ball). Flatten each ball using a tortilla press or a rolling pin between two sheets of plastic wrap.

Cook the Tortillas

Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 30 seconds on each side until lightly browned and cooked through.

Combine the Ingredients

In a small bowl, mix together cornmeal, chili powder, cumin, garlic powder, and salt until well combined.

Spread the roasted bone marrow on the warm corn tortillas and sprinkle with the corn chilli rub. Serve immediately.
