Marinate the Fish

In a bowl, combine the Ling Cod fillets with Adobo Rojo sauce. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Guacamole

In a bowl, mash the avocado and mix in lime juice, salt, and chopped cilantro. Adjust seasoning to taste and set aside.

Cook the Fish

Heat olive oil in a skillet over medium heat. Remove the fish from the marinade and cook for about 4-5 minutes on each side until cooked through and flaky. Remove from heat and set aside.

Prepare the Cheese

In the same skillet, sprinkle shredded cheddar cheese in small rounds and cook until crispy and golden on both sides. Remove and drain on paper towels.

Assemble the Tacos

Warm the flour tortillas in a dry skillet or microwave. Place a piece of fish on each tortilla, add a dollop of guacamole, top with crispy cheddar, and finish with finely chopped serrano peppers.
