Prepare the Jalapeños

Wash the jalapeños thoroughly and slice them in half lengthwise. Remove the seeds for a milder flavor if desired.

Infuse the Vodka

Place the sliced jalapeños in a large glass jar and pour the vodka over them. Seal the jar tightly and let it sit in a cool, dark place for at least 5 days, shaking it gently every day.

Make the Vanilla Syrup

In a small saucepan, combine the sugar and water. Split the vanilla bean lengthwise and add it to the saucepan. Heat over medium until the sugar dissolves completely. Remove from heat and let cool.

Combine and Strain

After 5 days, strain the jalapeño-infused vodka through a fine mesh sieve or cheesecloth into a clean bottle. Discard the jalapeños.

Mix the Liqueur

Add the cooled vanilla syrup to the strained vodka. Stir well until combined.

Bottle and Serve

Transfer the liqueur to a clean bottle. For best flavor, let it sit for an additional 2 weeks before serving. Enjoy it neat, on the rocks, or in cocktails.
