Prepare the Quinoa

Rinse the quinoa under cold water to remove any bitterness. In a pot, add 2 cups of water and bring to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until all water is absorbed. Once done, fluff with a fork and let cool.

Infuse the Vodka

In a large jar or container, combine the cooled quinoa with vodka, dried herbs, cinnamon stick, star anise, and black peppercorns. Seal the container tightly and shake gently to mix.

Steep the Mixture

Let the mixture steep in a cool, dark place for at least 5 days, shaking the jar gently every day to help the flavors meld together.

Strain and Sweeten (Optional)

After 5 days, strain the infused vodka through a fine mesh strainer or cheesecloth into a clean bottle. If desired, add honey to taste for sweetness and stir until dissolved.

Serve

Chill the infused vodka in the refrigerator and serve neat, over ice, or in cocktails.
