Preparing the Fries

Cutting the Potatoes

Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick.

Soaking

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Drying

Drain the fries and pat them dry with a clean towel.

Frying

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Seasoning

While the fries are still hot, sprinkle with salt and the house-blended BBQ spice.

Making BBQ Aioli

Mixing Ingredients

In a bowl, combine mayonnaise, BBQ sauce, lemon juice, and minced garlic. Stir until well combined.

Chill

Cover and refrigerate the aioli for at least 15 minutes before serving.
