Method

Prepare the Jerk Chicken

Marinate the Chicken

In a bowl, combine chicken thighs with jerk marinade and let it marinate for at least 2 hours or overnight in the refrigerator.

Cook the Chicken

Heat vegetable oil in a grill pan over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side or until fully cooked.

Make Pineapple Pico

Combine Ingredients

In a bowl, mix diced pineapple, red onion, cilantro, lime juice, and salt. Adjust seasoning as needed.

Prepare Mango Aioli

Mix Aioli Ingredients

In a bowl, whisk together pureed mango, mayonnaise, minced garlic, lime juice, and salt until smooth and well combined.

Assemble the Sandwich

Toast the Buns

Spread butter on the challah buns and toast them in a skillet or under the broiler until golden brown.

Build the Sandwich

On the bottom half of each bun, place a grilled jerk chicken thigh, top with pineapple pico, and drizzle with mango aioli. Cover with the top half of the bun.
