Prep the Ingredients

Slice the bell peppers and onions. Mince the garlic.

Prepare the Herring

If using whole red herring, clean and gut them. Rinse under cold water and pat dry.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add garlic, sauté for 1 minute until fragrant. Add sliced bell peppers and onions, cook for about 5-7 minutes until softened. Season with salt, black pepper, and paprika.

Cook the Red Herring

In the same skillet, push the vegetables to one side and place the red herring on the other side. Cook for about 5-6 minutes on each side or until cooked through and slightly charred.

Combine with Tomato Sauce

Pour the tomato sauce over the herring and vegetables, simmer for an additional 2-3 minutes until heated through.

Serve the smoked red herring with sautéed peppers and onions alongside warm roti.
