Rinse and measure
Measure rice
Measure 1 cup long-grain white rice. Place rice in a fine-mesh sieve or bowl for rinsing.
Rinse rice
Rinse the rice under cold running water, gently swishing with your hand, until the water runs mostly clear (about 30–60 seconds). This removes excess surface starch and prevents gumminess. Drain thoroughly.
Cook
Combine in pot
In a medium saucepan with a tight-fitting lid, combine the rinsed and drained rice, 1 1/2 cups water, and 1 teaspoon kosher salt. Stir once to distribute.
Bring to a simmer
Place the saucepan over medium-high heat and bring to a gentle boil. Once boiling, reduce heat to low so the surface is just simmering. Cover with the lid.
Simmer undisturbed
Cook covered on low heat for 15 minutes. Do not lift the lid or stir during this time, which lets the rice absorb steam evenly.
Steam off-heat
After 15 minutes, turn off the heat but keep the lid on. Let the rice steam for an additional 10 minutes undisturbed. This finishing steam completes cooking and firms the grains.
Finish and serve
Fluff and season
Remove the lid. Add 1 tablespoon unsalted butter or neutral oil if using. Use a fork to gently fluff the rice, separating the grains. Taste and add more salt if needed.
Serve immediately as a side or base for other dishes. Leftover rice can be cooled quickly and refrigerated in an airtight container for up to 4 days.
