Chill a coupe or Nick & Nora glass in the freezer or by filling with ice and water. If using an egg white, ensure it is fresh and at room temperature.

Combine

In a cocktail shaker, add 2 oz gin, 0.75 oz Cocchi Americano, 0.25 oz Green Chartreuse, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, 0.5 oz egg white (if using), and 2 dashes orange bitters.

Dry shake

If using egg white, first dry shake (no ice) vigorously for 12–15 seconds to build a froth and integrate the ingredients.

Shake with ice

Add a generous amount of ice to the shaker and shake hard for 12–18 seconds until the shaker is cold to the touch and the mixture is well chilled.

Double strain

Discard ice/water from the chilled glass. Using the Hawthorne strainer and a fine strainer, double-strain the cocktail into the chilled coupe to remove ice shards and any egg white solids for a silky texture.

Express the oils of a lemon twist over the surface of the drink, run the twist around the rim, and drop it into the cocktail. Serve immediately.
