Prep scallops

Pat scallops very dry with paper towels. Remove and discard side muscle if still attached. Season both sides evenly with kosher salt, black pepper and smoked paprika. Let sit at room temperature for 10 minutes while you prepare the crust.

Make crust mixture

In a medium bowl combine panko breadcrumbs, grated Parmesan, finely chopped crispy fried shallots, chopped toasted nuts, chopped parsley, lemon zest and garlic powder. Drizzle the 2 tablespoons olive oil over the mixture and toss until crumbs are evenly moistened and hold together when pressed. Taste and adjust seasoning with a pinch of salt if needed.

Heat a dry skillet over medium heat. Add the crumb mixture and toast, stirring constantly, 3–4 minutes until golden and fragrant. Transfer to a plate to cool completely. Toss once more to break up any clumps.

Preheat pan and oven (if finishing)

Preheat oven to 400°F (200°C) only if you prefer to finish the scallops in the oven for a guaranteed crunchy top. Otherwise you can finish entirely in the pan. Heat a large oven-safe skillet over medium-high heat and add 1 tablespoon olive oil.

Sear scallops

When the pan is hot and the oil is shimmering, place scallops in the skillet spaced at least 1/2 inch apart. Sear without moving for 1.5–2 minutes until a deep golden crust forms on the bottom. Flip scallops and sear the second side 30–45 seconds—scallops should be almost cooked through but slightly translucent in the center.

Apply crackling crust

Remove the skillet from heat briefly. Brush the top of each seared scallop with a thin layer of melted butter (about 1/2 tsp per scallop). Press about 1 tablespoon of the crumb mixture gently onto the buttered top of each scallop so the crust adheres. If the crumbs feel loose, press firmly but gently—do not flatten the scallops.

Finish to crisp the crust

Two finishing options: (A) Oven finish: transfer the skillet to the preheated 400°F oven and bake 4–6 minutes until the crust is golden and the scallops are just opaque through the center. (B) Pan finish: return the skillet to medium heat, cover loosely with a lid for 1–2 minutes and then uncover and cook another 30–45 seconds to crisp the topping. Use an instant-read thermometer if desired — scallops are done at 125–130°F (52–54°C) for medium; residual heat will carry them to 135°F.

Finish and garnish

Remove scallops from the skillet to a serving plate. Spoon any pan juices over them and squeeze fresh lemon juice on top. Scatter microgreens or chopped parsley for color and freshness. Serve immediately so the crust stays crackling-crisp.
