Wine Base

Method

Prepare Ingredients

1

Chill and slice

Chill the white wine bottle in the refrigerator until cold (ideally 2–3 hours). While the wine chills, thinly slice 1/2 lemon, 1/2 green apple (cored), and 1/4 cucumber. Gently bruise the mint leaves by clapping them between your palms or lightly muddling them to release aroma.

Build the Drink

2

Combine base and fruit

In a large pitcher (about 2 quart capacity), pour the chilled bottle of dry white wine. Add the sliced lemon, apple, cucumber, and bruised mint leaves. Stir gently to combine so the fruit is evenly distributed.

3

Sweeten and balance

Add 2 tablespoons of simple syrup (or agave) and 1 teaspoon freshly squeezed lemon juice to the pitcher. Stir once more and taste. If you prefer a lighter, more effervescent drink, add up to 1 cup sparkling water now; otherwise omit for a fuller-bodied serving.

Serve

4

Assemble glasses

Fill 4 white wine glasses with about 3/4 cup ice (or desired amount). Pour the Charles Mignon mixture into the glasses, making sure each glass receives some fruit slices and mint. If the pitcher was diluted with sparkling water earlier, pour gently to preserve bubbles.

5

Garnish & enjoy

Garnish each glass with a fresh mint sprig and a slice of lemon or apple if desired. Serve immediately while cold.
