Prepare equipment

Ensure your mixing bowl and whisk or beaters are completely clean and dry. Any fat or water prevents proper whipping. If possible, chill the bowl and whisk/beaters in the refrigerator for 10–15 minutes to help stability.

Separate eggs

Carefully separate 6 large egg whites from the yolks, making sure no yolk contaminates the whites. Place the whites in the chilled clean bowl.

Start whipping

Using an electric mixer or whisk, begin whipping the egg whites on medium speed until they become frothy and soft peaks begin to form (about 1–2 minutes).

Add acid and salt

Add 1 tsp fresh lemon juice and a pinch of fine sea salt to the whites to stabilize the foam. Continue whipping on medium-high speed.

Incorporate sugar gradually

When the whites reach soft peaks, add 3 tablespoons granulated sugar one tablespoon at a time, allowing each tablespoon to incorporate fully (about 10–15 seconds) before adding the next. This builds a glossy, stable meringue-like texture. Continue whipping until stiff, glossy peaks form and the sugar is dissolved (about 2–3 more minutes). Test by rubbing a little between finger and thumb — it should be smooth, not gritty.

Fold in flavor

Reduce the mixer speed to low or switch to a spatula. Gently fold in 1 teaspoon vanilla extract, taking care not to deflate the whites. If the recipe will be served warm or needs richness, fold in 2 tablespoons melted and slightly cooled unsalted butter in two additions, folding gently until just combined and the mixture is uniform. The final texture should be glossy and slightly billowy.

Season and plate

Spoon or pipe the prepared SMAK whites onto individual plates or a serving platter in portions appropriate for the number of servings. Sprinkle the freshly ground black pepper evenly over the top (about 1 tsp total), then garnish with 1 tablespoon finely chopped fresh chives or microgreens per serving as desired.

Optional cheese finish

If using, grate 2 teaspoons aged Parmesan or Manchego over the plated whites for umami and a savory finish. Serve immediately while the whites retain volume and lightness.

Serving suggestion

Serve the SMAK whites warm or at room temperature as a light starter, accompaniment to toast, or as a topping for roasted vegetables or grilled fish. This recipe yields approximately 3–4 modest portions (see servings).

Storage note

Prepared whites are best served immediately. If you must hold them, cover loosely and refrigerate for up to 2 hours; re-whipping is not recommended as structure will decline. Reheat gently in a warm (not hot) oven (150°C/300°F) for a few minutes if desired, but avoid drying out.
